I could go on and on trying to explain what Elea do, and I still wouldn’t be able to touch on how impressive their work is. Using the principals of physics (Pulsed Electric Field) they are able to alter food at a molecular level to increase shelf life, extract precious nutrients and help create new and interesting shapes (think spiral fries on a whole new level).
At first, getting my head round the science was no physics-improved picnic, but once armed with the knowledge, I was able to make the process and Elea’s work feel more accessible with simple language and staying clear of jargon.
